I don't know what you mean by "mono-ethnic" since most Han people don't look alike or speak the same language or have the same culture. China in premodern times had no protein shortage because the poor had beans, even if they lacked meat. During most of the bad times of the 19th-20th century the shortage was of food in general. It was a similar situation to the WWII Dutch famine, when children who grew up during the famine were physically stunted because the Nazis stole their food. And at some point there is a genetic limit to how tall someone can grow. Most Chinese-Americans are still extremely short despite having no caloric restrictions, probably due to evolutionary adaptations to the tropical climate of the Pearl River Delta (see Bergmann's Rule). It's the same with US-born Mexicans and Viets. I have only met one or two Chinese-Americans taller than I.
